Founded in 1890 by Salvador Falla Santos, San Sebastian has preserved for more than a century the same cultivation and mill practices that were founded by the founder. Since then the farm has been managed by four descendants: Don Salvador Falla Aris, son of the founder, who passed away in 1955; then Mr. Arturo Falla Cofiño was in charge of the farm in 1981; after Mr. Mario Falla González was in charge until 2003. Today, Mr. Estuardo Falla Castillo, great-grandson of the founder, is the one who represents the fourth generation of the family dedicated to the coffee activity. He continues with the management of all processes and each step of the coffee production at San Sebastian, guaranteeing the highest quality of the coffee.
In San Sebastian, the main objective is the excellence in production, in quality and in flavor, for this reason San Sebastian Genuine Antigua is unique in the world. On San Sebastian you have always been able to find very good clean washed process coffees, but over the last couple of years they have begun to experiment with Pacamaras, and also to develop processes for natural and pulped natural in Bourbon, Caturra, and Pacamaras, and to separate lots depending of the altitude and varietal. It’s this progressive approach to farming that makes San Sebastian stand out. This is the Pacamara varietal.
San Sebastian is known internationally as one of the finest coffee farms in the world. From the first award it received in 1904 to its win at the prestigious Cup of Excellence Competition in 2007, it’s clear that San Sebastian has mastered the art of coffee production. Quality control and use of technology allows the farm managers to analyze every lot that is harvested, ensuring great coffee each year.
